• 1 medium kohlrabi, peeled and grated

  • 1 medium turnip, grated

  • 1 medium summer squash, grated

  • 1 bunch green onions, minced

  • 2 eggs

  • 1 t each salt and pepper

  • 1/2 t baking powder

  • 3/4 c flour

  • 1 T finely minced fresh herbs (oregano, thyme, basil, parsley all work well)

Mix eggs, salt and pepper in a small bowl. Combine kohlrabi, turnip, summer squash, onion, basil/parsley, flour, and baking powder in another. Add egg mixture to zucchini mixture and mix well. Should be pancake-like consistency. Cook on hot skillet greased with oil or butter. Serve with sour cream and applesauce if desired.
