Trim the ends of the scapes, and toss them in olive oil/coconut oil/lard/your favorite fat. Sprinkle with salt and pepper, and roast at 425 for 15-20 minutes. It is fine if they overlap on the pan.
You can also follow the same preparation and toss them on the grill for about 2 min per side.
These are delicious as is for a side dish, or you can put them on top of meat or pasta for a mild garlicky flavor and beautiful presentation!
