• 1 lb sausage
  • 1 bunch garlic scapes
  • 1 summer squash
  • 1 bunch green onions
  • 8 eggs, whisked, with salt and pepper to taste.
  • Goat Cheese

Whisk eggs with salt and pepper, set aside. Preheat oven to 375. In a large oven-proof skillet (cast iron), cook the sausage until mostly done, then add the scapes, onions, and squash and cook another 3-4 minutes. Pour the eggs over the veggies, and do not stir. Cook until the eggs just start to set around the edges, 1-2 minutes. Crumble the goat cheese on top, and cook in oven another 10-12 minutes until eggs are set. Enjoy!
